- 1 cup dried black-eyed peas
- 4 slices of bacon
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 bay leaf
Instructions
- Soak the black-eyed peas overnight.
- In a pot, cook the bacon until crispy. Remove and crumble.
- Add chopped onion and garlic to the pot and sauté until soft.
- Add soaked black-eyed peas, chicken broth, salt, pepper, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 45 minutes.
- Remove bay leaf and stir in crumbled bacon before serving.
Notes
- Soaking peas helps reduce cooking time.
- Adjust seasoning to taste.
- Serve with cornbread for a complete meal.
