Description

Ingredients

  • 1/2 cup rice
  • 4 cups chicken broth
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 2 slices bacon, chopped

Instructions

  1. Soak black-eyed peas overnight.
  2. Drain and rinse peas.
  3. In a pot, cook bacon until crispy.
  4. Add onion, bell pepper, and garlic. Cook until soft.
  5. Add black-eyed peas, chicken broth, thyme, and spices.
  6. Bring to a boil. Reduce heat and simmer for 45 minutes.
  7. Add rice and cook for another 20 minutes.
  8. Serve warm.

  • Use smoked sausage for extra flavor.
  • Adjust spices to your taste.
