Description
A classic Southern dish made with black-eyed peas and rice.
Ingredients

- 1 cup black-eyed peas
- 1/2 cup rice
- 4 cups chicken broth
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 teaspoon thyme
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
- 2 slices bacon, chopped
Instructions
- Soak black-eyed peas overnight.
- Drain and rinse peas.
- In a pot, cook bacon until crispy.
- Add onion, bell pepper, and garlic. Cook until soft.
- Add black-eyed peas, chicken broth, thyme, and spices.
- Bring to a boil. Reduce heat and simmer for 45 minutes.
- Add rice and cook for another 20 minutes.
- Serve warm.
Notes
- Use smoked sausage for extra flavor.
- Adjust spices to your taste.
- Leftovers can be stored in the fridge for up to three days.
