Ingredients

- 1 cup dried black-eyed peas
- 4 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon cayenne pepper
- Salt to taste
- 1 tablespoon olive oil
- 1 bell pepper, chopped
- 1 can diced tomatoes (14.5 oz)
Instructions
- Soak the black-eyed peas overnight in water.
- Drain and rinse the peas.
- In a pot, heat olive oil over medium heat.
- Add chopped onion and bell pepper, sauté until soft.
- Add garlic, cumin, chili powder, and cayenne pepper, stir for 1 minute.
- Add black-eyed peas, diced tomatoes, and water.
- Bring to a boil, then reduce heat and simmer for 30-40 minutes or until peas are tender.
- Add salt to taste and serve hot.
Notes
- Adjust spices to your preference.
- Serve with rice or bread.
- Store leftovers in the fridge for up to 3 days.
