Ingredients

  • 1 teaspoon chili powder
  • 1/2 teaspoon cayenne pepper
  • Salt to taste
  • 1 tablespoon olive oil
  • 1 bell pepper, chopped
  • 1 can diced tomatoes (14.5 oz)

Instructions

  1. Soak the black-eyed peas overnight in water.
  2. Drain and rinse the peas.
  3. In a pot, heat olive oil over medium heat.
  4. Add chopped onion and bell pepper, sauté until soft.
  5. Add garlic, cumin, chili powder, and cayenne pepper, stir for 1 minute.
  6. Add black-eyed peas, diced tomatoes, and water.
  7. Bring to a boil, then reduce heat and simmer for 30-40 minutes or until peas are tender.
  8. Add salt to taste and serve hot.
