A flavorful and spicy dish made with black-eyed peas, perfect for a vegetarian meal.
Ingredients

- 1 cup black-eyed peas, dried
- 4 cups water
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 can diced tomatoes
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt to taste
- Black pepper to taste
- 1 jalapeño, chopped (optional)
Instructions
- Soak the black-eyed peas overnight in water.
- Drain and rinse the peas.
- In a pot, heat olive oil over medium heat.
- Add onion and garlic, sauté until translucent.
- Add bell pepper and cook for 3 minutes.
- Add the soaked black-eyed peas, diced tomatoes, cumin, chili powder, salt, and pepper.
- Add 4 cups of water and bring to a boil.
- Reduce heat, cover, and simmer for 45 minutes or until peas are tender.
- If using, stir in jalapeño for extra spice.
- Serve hot with rice or bread.
Notes
- Adjust spice level by adding more or less chili powder.
- Serve with fresh cilantro for added flavor.
