Ingredients

  • 1/2 cup all-purpose flour
  • 1/4 cup cornmeal
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cumin
  • 1/4 cup onion, finely chopped
  • 1 clove garlic, minced
  • 1/4 cup water
  • Oil for frying

Instructions

  1. In a bowl, mix spinach, black-eyed peas, onion, and garlic.
  2. In another bowl, combine flour, cornmeal, baking powder, salt, pepper, and cumin.
  3. Add the dry ingredients to the spinach mixture.
  4. Stir in water until a batter forms.
  5. Heat oil in a pan over medium heat.
  6. Drop spoonfuls of the batter into the hot oil.
  7. Fry until golden brown, about 3-4 minutes on each side.
  8. Remove and drain on paper towels.
