Easy recipe for black-eyed peas cooked in an Instant Pot without soaking.
Ingredients

- 1 pound black-eyed peas
- 4 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 2 tablespoons olive oil
Instructions
- Rinse the black-eyed peas under cold water.
- Turn on the Instant Pot and select the sauté function.
- Add olive oil, onion, and garlic. Sauté until onions are translucent.
- Add the rinsed black-eyed peas, water, salt, black pepper, and paprika.
- Close the lid and set the valve to sealing.
- Select manual pressure cook and set for 25 minutes.
- When cooking is done, allow natural release for 10 minutes, then quick release any remaining pressure.
- Open the lid and stir the peas. Serve warm.
Notes
- Adjust spices to taste.
- Serve with rice or cornbread.
- Store leftovers in an airtight container in the fridge.
