Ingredients

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth.
  3. Bring to a boil, then reduce heat and cover for 15 minutes.
  4. In a large bowl, mix black beans, corn, bell pepper, and avocado.
  5. Add cooked quinoa to the bowl.
