A rich and flavorful lobster broth perfect for soups and sauces.
Ingredients
Scale
- 2 lobsters, cooked and shells removed
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves of garlic, minced
- 2 tablespoons of tomato paste
- 1 teaspoon of thyme
- 1 bay leaf
- 8 cups of water
- Salt and pepper to taste
Instructions
- In a large pot, sauté onion, carrots, and celery until softened.
- Add garlic and cook for 1 minute.
- Stir in tomato paste, thyme, and bay leaf.
- Add lobster shells and water, then bring to a boil.
- Reduce heat and simmer for 30 minutes.
- Strain the broth and discard solids.
- Season with salt and pepper.
Notes
- Use the broth immediately or store it in the refrigerator for up to 3 days.
- Freeze the broth for longer storage.
