A rich and creamy lobster bisque that pairs well with various sides.


Ingredients

  • 2 cups cooked lobster meat, chopped
  • 4 cups seafood stock
  • 1 cup heavy cream
  • 1/2 cup white wine
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon tomato paste
  • Salt and pepper to taste

Instructions

  1. Melt butter in a pot over medium heat.
  2. Add onion and garlic, sauté until soft.
  3. Stir in flour, cook for 1 minute.
  4. Add white wine and cook for 2 minutes.
  5. Pour in seafood stock and tomato paste, bring to a boil.
  6. Reduce heat, add lobster meat and simmer for 10 minutes.
  7. Stir in heavy cream, season with salt and pepper.
  8. Blend until smooth if desired, then serve.

  • Serve with crusty bread or crackers.
  • Garnish with fresh herbs.
