Ingredients

  • 2 lobsters (about 1.5 lbs each)
  • 4 cups seafood stock
  • 1 cup heavy cream
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1/4 cup brandy
  • 2 tablespoons butter
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. Boil lobsters for 8-10 minutes until cooked. Remove meat and chop.
  2. In a pot, melt butter and sauté onion and garlic until soft.
  3. Add tomato paste and brandy. Cook for 2 minutes.
  4. Pour in seafood stock and thyme. Simmer for 20 minutes.
  5. Blend the mixture until smooth. Return to pot.
  6. Stir in heavy cream and lobster meat. Heat through.
  7. Season with salt and pepper. Serve hot.
