A simple and delicious vegan black eyed peas recipe.
Ingredients

- 1 cup dried black eyed peas
- 4 cups vegetable broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 teaspoon thyme
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Rinse the black eyed peas and soak them overnight.
- In a pot, sauté the onion, garlic, carrot, and celery until soft.
- Add the soaked black eyed peas, vegetable broth, thyme, and cumin.
- Bring to a boil, then reduce heat and simmer for 45 minutes.
- Season with salt and pepper before serving.
Notes
- Try adding other vegetables for more flavor.
- Leftovers can be stored in the fridge for up to 3 days.
