Instructions
- Heat olive oil in a skillet over medium heat.
- Add chopped onion and cook until translucent.
- Add garlic and bell pepper, sauté for 3-4 minutes.
- Stir in black-eyed peas and cumin, cook for another 5 minutes.
- Season with salt and pepper.
- Garnish with fresh cilantro before serving.
